10-Minute Broth Ramen Noodles

Ingredients

  • 300ml Spring bone broth (Thai Broth works beautifully)
  • 1 nest of noodles (ramen, egg or rice)
  • 1 egg
  • A handful of greens (pak choi, spinach or tenderstem)
  • 1 spring onion, finely sliced
  • Soy sauce, to taste
  • Optional: sliced red chilli, a drizzle of sesame oil, a few coriander leaves

A proper bowl of comfort in the time it takes to boil a kettle. Serves one.

  1. Bring a small pan of water to the boil and lower in the egg. Simmer for 6 minutes for a soft, jammy yolk, then sit it in cold water to stop it cooking. Peel and halve once cool enough to handle.
  2. Meanwhile, pour the broth into a second pan and bring to a gentle simmer.
  3. Add the noodles and greens to the broth and cook for 3 to 4 minutes, until the noodles are tender and the greens have just wilted.
  4. Tip everything into a deep bowl. Top with the halved egg, the sliced spring onion, a splash of soy and any chilli, sesame oil or coriander you fancy.
  5. Eat straight away, while it's hot and the yolk is still soft.
