Ingredients
A proper bowl of comfort in the time it takes to boil a kettle. Serves one.
- Bring a small pan of water to the boil and lower in the egg. Simmer for 6 minutes for a soft, jammy yolk, then sit it in cold water to stop it cooking. Peel and halve once cool enough to handle.
- Meanwhile, pour the broth into a second pan and bring to a gentle simmer.
- Add the noodles and greens to the broth and cook for 3 to 4 minutes, until the noodles are tender and the greens have just wilted.
- Tip everything into a deep bowl. Top with the halved egg, the sliced spring onion, a splash of soy and any chilli, sesame oil or coriander you fancy.
- Eat straight away, while it's hot and the yolk is still soft.
